Der Baur von Eselskirchen,
der hat ein feiste gaga Gans,
das gyri gyri gaga Gans!
Die hat ein langen, feisten, dicken, weidelichen Hals,
bring her die Gans,
hab dir’s, mein trauter Hans!
Rupf sie, zupf sie, feud sie, brat sie, z’reiss sie, friss sie!
Das ist Sankt Martins Vögelein,
dem können wir nit Feind sein!
Knecht Heinz, bring her ein guten Wein
und schenk uns tapfer ein;
lass umhergahn, in Gottes Nam’ trinken wir gut Wein und Bier
auf die g’sottne Gans, auf die bratne Gans, auf die junge Gans,
dass sie uns nit schaden mag.

The farmer from Eselkirchen
has a plump goose,
with a long, fat, thick, willowy neck:
Bring the goose hence
[I've got it?] my trusty Jonney!
Shear, pluck, scald, roast, carve and devour it!
That's St. Martin's bird,
whom we would not turn against! [by refusing]
Servant Heinz, bring some good wine
and pour bravely;
let it go all around, and in God's name let us drink good wine and beer
to the boiled, roasted, young goose
that it do us no ill.

Luister naar dit nieuws!
De boer uit Eselkirchen heeft een mollige gans,
met een lange, vette, dikke, hals als een wilg:
kom hier met die gans! Scheer 'm, pluk 'm, braad 'm, rooster 'm, snijd 'm, verslind 'm!
Dit is Sint Maarten's vogel, Die kunnen we toch niet weigeren!
Bediende Heinz, breng een goed glas wijn.
En schenk ons dapper in, laat alles rondgaan, in Gods naam we drinken goede wijn en bier.
Op de gekookte gans, de gebraden gans, de jonge gans.
Dat ze ons niet mogen schaden (wel mogen smaken).
